Here on the farm we continue to produce fresh quality meats for our family and yours. We raise our animals on plenty of fresh grass, hay, and sunshine with minimal grain. This produces flavorsome cuts of meat that are tender & tasty but not laden with fat. Our animals grow at their own natural pace, on a daily diet free of growth hormones and antibiotics. It does take longer to produce animals this way, but we feel the taste is worth the wait!
We are now selling our meats by the final packaged weight instead of by the side. We've simplified the order process to ensure that you know exactly how much meat to expect and what it will cost you. We will personally pack the boxes here at the farm to inspect the wrapping quality and check the final weights.

Purebred Galloway Beef is the absolute best for fine flavor, juiciness and texture. You have to try it to understand! We allow our beef animals to grow and fatten naturally on a forage diet, and then finish them on dry hay and grains. This production process take longer, but the flavor of the meat is fantastic. All beef is dry aged under USDA inspection for a minimum of 14 days, then cut and packaged in cryovac. Cooking grassfed beef properly takes some skill, so be sure to read "The Grassfed Gourmet Cookbook" by Shannon Hayes for tips on cooking grassfed meats and recipes to awaken your taste buds!

You simply have not had good tasting pork until you have tried a Berkshire. Our Berkshire hogs produce an incredibly rich & flavorful moist meat. The Japanese refer to the Berkshire as "Kurobuta", a breed they prize as much as Kobe beef. Our breakfast sausage seasoning is delicious, and the nitrate free bacon and hams are worth the wait! Nitrate free smoking is done at Noack's, a traditional German smokehouse located in Meriden, CT.

Summer lamb is a great way to stock your freezer full of delectable lamb chops, ground lamb and leg roasts to enjoy over the winter. Summer lamb must be ordered in advance so that we reserve and grow a lamb on for you. Summer lambs typically weigh 120-175 pounds live weight.
Whole summer lambs are excellent roasted over the barbeque! Purchase the animals live and have them processed at a local butcher of your choice.
Lighter lambs are generally ready in June/July and can be processed at a local custom butcher, packaged in plastic liner freezer paper. Heavier lambs will be ready for early November, processed under USDA inspection and packaged in cryovac. The average butcher fees are $80-$115 per whole summer lamb. Whole summer lambs processed in November typically cost around $450 total.

Spring lamb is often the meal of choice for Easter dinner, especially tender as the lambs are still on milk. Spring lamb is sold on the hoof at the farm, although we can deliver it to a local custom butcher shop for a small fee. Please remember that the butcher does require an appointment - it is best to make arangements at least a month in advance!
Spring Lamb is sold by the live weight of the animal on the day it leaves the farm. $50 deposit per animal required in advance.
